So have you become adept at using a hydrometer yet.
Because specific gravity is the only way to determine if
fermentation was successfull.

Yeah, I used it on the most recent batch, as it was my first non-kit batch. The slightly high FG after eight days of fermenting inspired me to let it sit another four or five days, probably a good idea in any case.

You always have to use a hydrometer.Otherwise how will you
know if fermentation was successfull.
If you use a plastic popper top to gauge the amount of activity
of yeast during fermentation, when it slows to maybe one pop
per minute, then the fermentation had concluded.
Unless you have a stuck fermentation.Whihc could be caused by
erratic temperatures where you place the fermenting brew.
An unused bathroom or place in the basement where a cooler
and consistent temp can be maintained.
Yeast is finicky about changes in temp.
W/O those little yeast cells during their thing...No Brew.

$12.Almost unheard of for a Bordeaux.
Of course there are far better wines in that price range.
I usually look for $10-$ 30 bottle red wines.
Wines are finicky and all are different.
usually a good red is better after it sits for a few days, even
up to a week,after opening.Of course,it's best to have a nice
cool cellar for storage.
Wine does best around 60 degree.

Okay, I would be willing to share at that price range.
Wines are finicky and all are different.
usually a good red is better after it sits for a few days, even
up to a week, after opening.Yeah well it doesn't last around here long enough to "get better" and I seem to cope okay with the flavour.

Wine does best around 60 degreeYeah well, condo living and all, no access to a basement unless you count my storage locker. You can buy those wine fridges though. They have a section for white and a section for red. I am not a serious connoisseur so wouldn't be worth it for me at least not right now anyway. Perhaps when I retire.
It has taken me a few years to get my partner to indulge with me. At the time I was drinking white. When he tasted red he was like a "duck to water" so to speak... But we are not serious drinkers and I don't have the $$$ to spend right now on expensive wine for every day indulgence. We tend to treat ourselves if we are having company it's easier to justify.
