Are people not concerned that the POTUS is completely undermining the legislative branch of our country by attaching "signing statements" to laws which basically say "I, the President, am going to sign this bill into law but reserve the right to not enforce it"?

Do people see the implications of this being the way law is made in this country? When vetos are only used for political attention, not as the legislative carving tool our Constitution intended it to be?

I'm concerned that he thinks he can get away with it. But I don't think any court would ever find the signing statements valid, so ultimately I'm not concerned about any effect on the separation of powers.

Correct and regardless of what nonsense the president uses, the law of the land is still the constitution and the bill of rights and they are ultimately enforced by the power of the people.
